This year for my oldest sisters birthday I wanted to make her a special cake!! I made a Lemon Chiffon cake! I used a Gluten free cake mix, lemon frosting, and a lemon pie filling.
Here's what you need:
1 Gluten free cake mix
3 egg yolks
3 egg whites
2/3 cup milk
1/2 cup oil
1/2 teaspoon cream of tartar
1 can lemon frosting
1 can lemon pie filling
1 1/2 teaspoon lemon extract
Separate your eggs and place your whites in your mixer and add your cream of tartar. If your cake mix calls for more than three eggs, just add another 1/2 teaspoon of cream of tartar. Beat on high until your whites have stiff peaks. Follow your cake mix instructions and add your extract if your doing lemon cake. Gently fold your egg whites into the cake batter. Place your batter in your choice of cake pan and cook according to the box instructions. Test with a toothpick in center of cake. If the toothpick comes out clean your cake is done. Let cool completely. If you don't want lemon, frost the cake with your choice of frosting and enjoy!
Now if you want lemon topping (or another flavor) make a ring of frosting on the edge of the bottom layer of cake. Dump about half a can of the pie filling in the middle of your ring and spread out evenly. Now place your second layer of cake on top and make another ring of frosting on the top layer and fill with pie filling. Make sure you cover the sides of your cake well with frosting.
