Orange and white chili!


My mom is the queen of chili! Everyone that tries her signature chili falls in love with it! So when football season came around she decided that she wanted to make a orange and white chili in honor of the Tennessee Volunteers!

Here's what you need:

2lbs ground chicken
2 48oz jars of Randall's white beans
1/2 white onion, thinly sliced
1 orange bell pepper, thinly sliced
1 can of mild Rotel
1 packet of Texas style taco sauce
1 tsp cumin
1.2 tsp paprika
1 tsp garlic
salt and pepper to taste  

Optional toppings:
Cheese
Corn chips
Green onion
Jalapenos
Sour cream
 
First brown your chicken in a large stock pot. Now add your bell pepper and onion. Once your veggies are soft add your white beans with all the juice, Rotel, and taco sauce. Now add your cumin, paprika, garlic, and salt and pepper. Let simmer for 1-3 hours. Serve hot and with your choice of toppings! Enjoy!

Homemade Crepes


Breakfast food is probably my favorite! Now with this super easy, gluten free, crepe recipe we can all enjoy this awesome breakfast food!


Batter:
3/4 cup GF all purpose flour
3/4 cup GF baking mix
2 eggs
1/4 cup vanilla yogurt
2 tbsp oil
1 cup milk

 Filling:
3/4 of a package of cream cheese at room temperature
3/4 cup vanilla yogurt
Fruit or berries of your choice, fresh or frozen
 
Preheat a medium sized nonstick skillet on low to medium heat. Do not spray your pan with nonstick spray! In a medium size bowl mix both flours, eggs, vanilla yogurt, oil, and milk until smooth. Once the pan is hot, pour a 1/3 of a cup of batter into the pan and spread till batter is thin and completely covering the bottom of the pan. Carefully flip your crepe once its slightly golden brown and repeat on the other side. When your crepes are done cooking mix the cream cheese and the remaining vanilla yogurt until smooth and creamy. Once your crepes are done cooling, spread your cream on the inside of your crepes and fill with berries or fruit. Now roll your crepe and get creative with the decorations!
