Sugar free honey ice cream!!


I love ice cream! And i really hope that you and your family love my sugar free honey ice cream!!

Here's what you need:
                                                                         
2 cups heavy cream                                        
1 cup milk                                              
1/2 cup agave nectar
1/2 + 1 tablespoon honey
1 teaspoon vanilla extract

Helpful hint: when using honey, spray you measuring cup with cooking spray and it will come right out!

Combine heavy cream, milk, agave, honey and vanilla in a medium sized bowl. When the honey and agave is completely dissolved, cover with plastic wrap and let your mixture chill in the fridge for an hour. Once your mixture is chilled, pull out your ice cream maker and churn as your instruction book recommends. It will be soft serve when it is finished churning, but for a thicker ice cream let it freeze until it reaches the desired consistency.

Momma's easy sushi recipe!


My family absolutely loves sushi. But with Celiac, you have to be super careful about which ones you eat. So to satisfy my family's craving, my mom made this easy sushi recipe for under $20!

Here's what you need:

1 bag roasted seaweed snacks
4oz smoked salmon
1 package of cream cheese
3 cups of sushi rice
1/4 cup rice vinegar
2 tablespoons sugar

Optional toppings:
 Thinly sliced bell pepers
 Sliced avocado
 Soy sauce
 Homemade shrimp sauce

Homemade shrimp sauce:
3/4 cup mayonnaise
4 tablespoons of ketchup
1 teaspoon salt
1 teaspoon garlic
1/8 teaspoon paprika
1 tablespoon vinegar
 
Cook your rice according to you rice cooker. Pour your vinegar in a sauce pan with your sugar and let simmer for about 10 minutes. Now add your rice vinegar to your cooked rice. Crush the seaweed snacks and stir them into the rice. Form your rice into small balls. Now for the fun part, you and your family can top your sushi balls with whatever you wish!

Beautiful Blueberry Pancakes!


Pancakes are a classic breakfast food! Unless you have Celiac! So my mom came up with this amazing gluten free blueberry pancake recipe!

Here's what you need:

Dry ingredients
1 cup oat flour
1 cup all purpose gluten free flour ( we used Aldi's )
1 tsp salt
3 tsp baking powder
2 tsp flax seed meal

Wet ingredients
2 cups milk
1 egg
1/4 cup vegetable oil
3/4 cup frozen blueberry's
1 tsp cornstarch

Whisk your dry ingredients in a medium bowl. Add all wet ingredients ( except blueberry's and cornstarch )  into the dry mixture. Stir with a whisk until smooth. Now in a small bowl toss your blueberry's in the cornstarch just enough to coat them and pour them into the mixture. Stir gently.  Heat a medium pan to about 5 or a large griddle to 375 degrees. Once its hot pour about 1/3 cup of batter on the pan and wait until the top of the pancake is bubbling and the bottom is golden brown and flip with a spatula. Let the pancake cook on the other side until golden brown as well. Serve with your favorite pancake toppings! Enjoy!

Coconut mounds!


Happy Mothers Day!! I made these for my mom and great-grandmother as a special Mothers Day dessert!! I hope you and your family enjoy my recipe!

Here's what you need:
2 tbs Coconut oil
1 1/3 cup Shredded coconut
1 cup semi-sweet chocolate chips

Melt your chocolate and coconut oil in the microwave until chocolate is smooth. [about a minute and a half.] Once chocolate and oil has melted add your coconut. Now place some parchment paper on a 13x9 cookie sheet. Scoop the mixture using a tablespoon or melon baller onto the prepared sheet. Freeze for about 10 minutes and then refrigerate until your mounds have hardened. Enjoy!!

One pan wonder!

This is my Great great grandmother's cobbler recipe that she's been making for years! And yes, when I said "One pan wonder'' I meant one pan wonder!

Here's what you need:

1 stick of butter
1 cup GF flour [ I used oat flour. ]
1 cup sugar
1 cup milk
1 egg [ The egg is optional. It simply gives it a more cake like flavor. ]
1 can of your favorite fruit [ you can use an equal amount of fresh fruit if you'd like. If you use fresh add sugar to taste. If using canned drain some of the juices.]

Preheat your oven to 400 degrees. Melt your butter in a 13x9 pan. Mix your sugar, milk, and flour in your pan. Now add your fruit mainly down the middle of the pan. Bake for about 30 minutes or until golden brown. Enjoy!!

Blackberry ice cream!

I love making ice cream, and I also love making my own ice cream recipe! Just like I did with this one! I made this ice cream and it was a big hit at my sisters birthday party! Hope you like it!

Here's what you need:

1 cup milk
2 cups heavy cream
3/4 cups sugar
1/2 teaspoon vanilla
1 teaspoon blackberry extract
1/2 fresh or frozen blackberry's

First put all your ingredients into a *freezer safe bowl and blend with a hand blender until the ice cream is a light purple. {if you don't have a hand held blender you can use a blender.} Cover and refrigerate for at least 1 hour or over night. Once your ice cream has been chilled, churn it as your ice cream instruction booklet says. If you saved your bowl place your ice cream back into it. Now freeze your ice cream to desired firmness. How to make Chiffon cake!

This year for my oldest sisters birthday I wanted to make her a special cake!! I made a Lemon Chiffon cake! I used a Gluten free cake mix, lemon frosting, and a lemon pie filling.


Here's what you need:

1 Gluten free cake mix
3 egg yolks
3 egg whites
2/3 cup milk
1/2 cup oil
1/2 teaspoon cream of tartar
1 can lemon frosting
1 can lemon pie filling
1 1/2 teaspoon lemon extract

Separate your eggs and place your whites in your mixer and add your cream of tartar. If your cake mix calls for more than three eggs, just add another 1/2 teaspoon of cream of tartar. Beat on high until your whites have stiff peaks. Follow your cake mix instructions and add your extract if your doing lemon cake.  Gently fold your egg whites into the cake batter. Place your batter in your choice of cake pan and cook according to the box instructions. Test with a toothpick in center of cake. If the toothpick comes out clean your cake is done. Let cool completely.  If you don't want lemon, frost the cake with your choice of frosting and enjoy!


Now if you want lemon topping (or another flavor) make a ring of frosting on the edge of the bottom layer of cake. Dump about half a can of the pie filling in the middle of your ring and spread out evenly. Now place your second layer of cake on top and make another ring of frosting on the top layer and fill with pie filling. Make sure you cover the sides of your cake well with frosting. Copy-cat Chick-fil-a chicken


Most people with Celiac think that they can't eat at there favorite fast food restaurants but with this copy-cat recipe you can enjoy Chick-fil-a at home!!  I found this recipe Paleo "Chick-fil-A" nugget recipe on www.pinterest.com and made a few small adjustments! Hope you like it! 

Here's what you need:

4 chicken breasts
1/2 cup dill pickle juice
1/4 cup Arrowroot starch
1/4 cup oat flour
3 tsp paprika
2 tsp black pepper
2 tsp salt
5 egg's
Oil to fry

Okay so first heat you oil for frying your chicken. Cut your chicken into 1inch pieces. Set aside. Heat your oil in your deep frier or dutch oven. Now combined all your dry ingredients in a pie pan. Then crack your egg's in to a small bowl. Take a spoonful of your chicken and place it in the flour mixture. Coat you chicken all over and transfer into the egg's. Now carefully place you chicken into your deep fryer or dutch oven in small batches. Cook until golden brown and crispy and carefully pull a piece apart to make sure its cooked. If your chicken is still a little pink carefully place your chicken back in the deep fryer or dutch oven until its cooked. Let cool for about a minute or two. I hope you and your family enjoy this amazing chicken!

Easy Oven Bake Meatballs!

My little brother absolutely love's spaghetti and meatballs so I knew I had to make my own meatballs!

Here's what you need:

1 lb ground turkey {or ground beef.}
3 eggs
1 tsp salt
1/2 tsp pepper
1/2 tsp oregano
1 clove garlic
1 tsp onion powder
1/2 cup GF flat-bread crackers

Preheat you oven to 350 degrees [F] Simply mix all your ingredients in a medium bowl with your hands. Now form you meatballs using a tablespoon onto a baking sheet. Cook you meatballs for 18 minutes. Serve warm with your spaghetti. Please comment if you try my recipe! I hope you enjoy it!  

Valentines treats!

Happy Valentines day everyone! I love chocolate and popcorn so I made this awesome Valentine treat I know you and your family will love!

Here's what you need:

1/3 cup popcorn kernels
2/4 cup chocolate chips {plus about 2/4 to melt.}
1/2 cup M&M's
2 cups rice cereal

First air pop your popcorn. { if you don't have a popcorn maker you can use a bag of unsalted popcorn} To melt your chocolate, preheat your oven to 275. Pour 2/4 of your chocolate in a metal bowl and place in the oven until the chips are smooth and melted. Now combined popcorn and cereal in a large bowl. Add your M&M's and drizzle your melted chocolate and stir. Enjoy!

Best. Chocolate Cake. EVER!


A few days ago it was national chocolate cake day so I knew we had to make some fabulous cake!
I found this amazing Chocolate Quinoa Cake recipe from another blog called Making Thyme for Health. It is the moistest GF cake I have ever tried! I know what your thinking, cake made from quinoa? But let me tell you, you'll want this cake all the time!

Here's what you need:
2 cups cooked Quinoa*
1/3 cup milk
4 whole eggs
1 tsp vanilla extract
1/2 cup butter, melted and cooled
1/4 cup coconut oil, melted
1 cup sugar
1 cup unsweetened cocoa powder
1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
Chocolate frosting. You can use canned or use your own recipe

1. Preheat oven to 350 degrees F and then line two round cake pans {or 13x9} with parchment paper.
2. In a food processor or blender combine eggs milk and vanilla.
3. Add cooked and cooled quinoa along with melted and cooled butter and coconut oil and blend until completely smooth.
4. Sift together all dry ingredients in a bowl.{sugar, cocoa powder, baking soda, baking power and salt.}
5. Combine the dry mixture into the wet and blend until smooth.
6. Divide mixture between the cake pans and cook for 30 minutes. Remove cake from oven and allow to cool.
7. Once the cake has cooled your ready to frost it! Place a piece of parchment paper on a cake stand. Now put your first cake on the parchment and put a scoop of frosting on the cake and spread it out. now take the second cake and place the flat part up. Now get another heaping scoop of frosting and spread it on the top of your cake and slide the frosting to the "side's" of your cake. Gently remove the parchment from under your cake. Now your cake is complete!
8. Enjoy and try not to eat the whole cake by yourself!

*3/4 cup of dry quinoa will give you about 2 cups when cooked. To cook the quinoa put 1 1/2 cups water in a medium sauce pan and bring to a boil. Add the quinoa and reduce to a simmer. Cover and cook for about 10-12 minutes. When the quinoa is done fluff it with a fork and make sure there are no crunchy pieces of quinoa.

Breakfast special anyone?

One morning I woke up and didn't feel like eating cereal, so I asked my mom if I could make something for breakfast and she said sure! So I went into the kitchen, looked in the fridge and found inspiration for this!

Here's what you need:

1 small GF corn tortilla
1 egg
2 slices ham or turkey meat
a little sliver of butter
1/4 cup cheese
 Sprinkle of chopped chives [optional]

First get out two small pans. In the first pan take a sliver of butter and place it in the pan over medium heat.Place the tortilla in the pan.  Flip your tortilla too make sure you don't burn it. All you want to do is get it crispy. Then in the second pan, cook your egg the way you like them. [ Runny, over easy, is best for this recipe.] Now remove your egg and set to the side. Cut your ham or turkey into small bite size pieces and cook in the same pan as your egg till a little crispy. Now we assemble the dish! Place your meat on the tortilla in the pan. Then carefully place your egg on top, and finally sprinkle cheese on top and add your chives. [ The chives are optional, and You can use as much or as little cheese as you want.] Now place a lid on you hot pan until the cheese is good and melted. Hamburger's


 Hamburgers are a favorite for everyone, but for those of us who have Celiac sadly can't enjoy hamburger buns. So we use a large portabella mushroom as our bun! Simply cook you hamburger's as you like them. Then carefully wash you mushroom's and take out the stem. Warm you cleaned mushrooms in a skillet. Now place you meat in the mushrooms along with your lettuce, tomatoes, cheese, or whatever you want!

ADDICTING peanut butter ice cream!

 A few years ago I got an ice cream maker for Christmas and have tried so many great recipes and this is one of my mom's favorite's! It also became the favorite of my cousin who made this ice cream about 25 times this summer! Hope you like it!
Here's what you need:
1 cup Peanut butter
2/3 cup sugar
1 cup milk
2 cup heavy cream
1 tsp vanilla

In a medium mixing bowl, combined the peanut butter and sugar until smooth. Add milk and mix until sugar is dissolved. Stir in heavy cream and vanilla. Cover and refrigerate 1 to 2 hours or over night.
Turn on your ice cream maker and pour in ice cream mixture. Churn for about 20 minutes.
If you like you ice cream softer you can eat as soon as its done churning, but if you like firmer ice cream, place you ice cream in the freezer for about 2 hours.

 

Pork Roast!

 This is my first blog post so let me tell you a little bit about myself! I'm making this blog for all the people who don't think they can survive the gluten free diet without pizza, donuts, toaster pastries, pasta, ect. I will be using my childhood nickname which is Bug. I have a true passion and love for Christ! I love to cook for my friends and family.  So, I thought we'd start off with a wonderful pork roast!

Here's our coated pork!
 What you'll need:
1 small Onion, cubed
2 cloves minced garlic
2 tbs salt
1 1/2 tbs pepper
1 tsp garlic powder
1/2 tsp cayenne pepper
1 tsp onion powder
4 lbs Pork loin roast
4 cups water
 About 1/4 cup brown sugar
1 16oz can of "Bone Sucking Sauce" BBQ sauce 

First preheat you oven to 375. Coat all four sides of you pork with your onion powder, garlic powder, salt and pepper, and cayenne pepper. Then make a good sear on all four sides of your pork in a dutch oven or large pan. Next remove you pork and statute you garlic and onion in the pork grease. On a separate plate, make a brown sugar crust on the fat side of your pork. Then place you pork back in the pan or dutch oven [If you don't have a dutch oven you can cook you pork in a slow cooker.] and add your water on the sides of you dutch oven [or slow cooker]. Place your dutch oven in the oven and let you meat cook for about 2 hours. Let meat cool. Shred meat using two forks and pour as much BBQ sauce as you desire! Serve hot and enjoy!
