Pancakes are a classic breakfast food! Unless you have Celiac! So my mom came up with this amazing gluten free blueberry pancake recipe!
Here's what you need:
Dry ingredients
1 cup oat flour
1 cup all purpose gluten free flour ( we used Aldi's )
1 tsp salt
3 tsp baking powder
2 tsp flax seed meal
Wet ingredients
1 egg
1/4 cup vegetable oil
3/4 cup frozen blueberry's
1 tsp cornstarch
Whisk your dry ingredients in a medium bowl. Add all wet ingredients ( except blueberry's and cornstarch ) into the dry mixture. Stir with a whisk until smooth. Now in a small bowl toss your blueberry's in the cornstarch just enough to coat them and pour them into the mixture. Stir gently. Heat a medium pan to about 5 or a large griddle to 375 degrees. Once its hot pour about 1/3 cup of batter on the pan and wait until the top of the pancake is bubbling and the bottom is golden brown and flip with a spatula. Let the pancake cook on the other side until golden brown as well. Serve with your favorite pancake toppings! Enjoy!
