Homemade Crepes
Breakfast food is probably my favorite! Now with this super easy, gluten free, crepe recipe we can all enjoy this awesome breakfast food!
Batter:
3/4 cup GF all purpose flour
3/4 cup GF baking mix
2 eggs
1/4 cup vanilla yogurt
2 tbsp oil
1 cup milk
Filling:
3/4 of a package of cream cheese at room temperature
3/4 cup vanilla yogurt
Fruit or berries of your choice, fresh or frozen
Preheat a medium sized nonstick skillet on low to medium heat. Do not spray your pan with nonstick spray! In a medium size bowl mix both flours, eggs, vanilla yogurt, oil, and milk until smooth. Once the pan is hot, pour a 1/3 of a cup of batter into the pan and spread till batter is thin and completely covering the bottom of the pan. Carefully flip your crepe once its slightly golden brown and repeat on the other side. When your crepes are done cooking mix the cream cheese and the remaining vanilla yogurt until smooth and creamy. Once your crepes are done cooling, spread your cream on the inside of your crepes and fill with berries or fruit. Now roll your crepe and get creative with the decorations! Here's some fun ideas to fill your crepes with: Chocolate and bananas, Salmon and cream cheese (for those who prefer savory foods) strawberry and banana, black cherries and blueberries, I could go on and on!
